The year 1959 is pretty well documented. Despite what the previous owner says, it is unlikely that it came from the factory all white.
If the paint is in good shape, and you're just planning to ride it and enjoy it, leave it as is.
If you're going to restore it, pick one of the documented paint schemes - that will add to the value.

We just bought a 59 hummer. We were told it was original paint and it looks to be original to us, however it is white. From what we read in your info this was not an option. Can you help us? The guy we bought it from kept telling us not to paint it because its original and thats where the value is. Will painting it hurt the value?
